  • Fresh Green Bean Casserole

    Okay so here's the thing. I like to cook fresh veggies when ever possible. My next preference is Frozen because lets face fresh veggies are not always cheap. My very last resort is canned veggies. I'll feed them to my husband and kids cause thats what my hubby grew up on but since I've been on the way of eating I truly prefer the nutrition of fresh or frozen veggies.

    So long story short another member on here gave me a recipe for Green Bean Casserole that is Atkins Legal. I had every intention of using it for the holidays so I made it first and it was goooooddd! So I've been thinking about it for a long time and I wanted to substitute the canned ingredients with fresh ingredients. In place of two cans of canned green beans I steamed some fresh greenbeans and I'm using those. Instead of canned mushrooms I got fresh ones already sliced for my convenience. I'm smells fantastic. I cannot wait till dinner!!!

    I grew up on canned too. I still prefer it for the most part. I do buy frozen broccoli, cauliflower and okra but I have never liked frozen green beans, peas or spinach. To me it seems waxy and fake and kinda like the stuff in tv dinners. I wish I liked frozen because here its cheaper than most cans. (bigger quantities for the price)


    I looove green bean casserole but I always loved the "crunchy" top. I haven't tried it with anything like pork rinds I don't know if that would be good or not.

      I'm not sure how it would taste. I never thought of that!

      The casserole turned out so good it would make you slap your mama! Unfortunately I forgot to put it away last night and now I have to throw the leftovers away since they sat out on the counter all night.

      Oh well Thanks for replying!

        I use dried minced onions as a replacement.
