  • Red Beans

So.. culturally, my family eats a lot of beans. A lot. And before anyone can make any jokes, no, we don't have bad flatulence! XD I guess since it's been a food staple for so long in our culture, it doesn't effect us.. but ANYWAY..

I have all these dried red beans my mom gave me and I've been wanting to cook, but they're not exactly low carb. I'm wondering if there's anything I can do with them? I've been doing Atkins for about two and a half months now, so I'm in the later stages, BUT I try to stay at around 30-35 carbs a day to maintain my loss. I wonder if I'll have to give them away, or if I can cook them with a bit of pork?

*sigh* I really hate seeing them go, but I'm not gonna sabotage myself.

If you are on the Legume Rung of OWL Phase or the Legume Rung of Pre-Maintenance, then it's okay to try out the beans---in OWL and Pre-Maintenance amounts.

PS. dried beans have a long shelf life. Just keep them in a dry place and they will stay good a long, long time.
