    what is your dinner going to be tonight?

    It is sooo cold right now ..but crispy cold sun is shining and everything sparkling from the frost ...

    I have a lot of herbage in my garden right now so I am taking advantage and making my favorite Oyster/Mushroom stew...here is the recipe!

    4 T unsalted butter
    1/4 cup small dice sweet onion
    1/2 cup small dice celery
    1 T minced garlic
    1 cup rehydrated in dry white wine porcini mushrooms cut up small
    1 T minced fresh thyme
    2 cps heavy cream
    1 pint oysters, drained, liquor reserved
    1T fresh lemon juice and part of the rind grated
    Lots of fresh cracked pepper
    small handful of fresh minced parsley
    kosher or sea Salt
    for garnish some fresh minced chives

    Melt butter in about a 2 qt sauce pan Add the onions, celery, and cook, stirring, until soft and translucent. Add the garlic and cook, stirring, for 30 seconds. Add the mushrooms (drained but liquid reserved..and thyme, and cook, stirring, until the warmed through but not browned...nothing should be browned in this add the mushroom wine liquid and bring to a simmer. Cook, stirring, until reduced by half. Add the cream and oyster liquor and cook, stirring, until slightly thickened. Add the lemon juice and oysters and cook until the oysters begin to curl, 2 to 3 minutes. Stir in the parsley and adjust the seasoning to taste...

    this is freaking awesome!!!

    We're being lazy tonite. So I'm going to spice up some boneless skinless breasts and cook them on the George Foreman. For a veggie I"ve got either some Brociflower to will steam and top it with cheese or I'm thinking low carb green bean casserole...decisions decisions ensive

      I had a salad today (lettuce&spinach) and chicken breast rolled with cheese. Nothing special but tomorrow .... it´s shopping day!!!! :joy I´m right now writing my list ... squid, scampi, sirloin, creme frâiche,... Mmmmm! :icondance

        Broiled chicken with a side green salad...it's in the oven right now and smells so yummy I wish it would hurry up and cook already.

          Not very exciting at my house -- DH has the flu (in bed for the past three days with no signs of being any better!) -- so I had some leftover meatloaf, leftover mashed cauliflower (with cream cheese and cheddar) and some leftover squash casserole (yellow squash sauteed with onion, then add some Rotel Tomatoes and cheddar cheese -- it's a low carb version of Threadgill's San Antonio Squash casserole -- great Austin, TX home-cookin' restaurant).

            Sauteed diced zucchini,onion and sweet pepper, added some cubed boneless chicken breast and Carb option's teriyaki.

            It's simple but it's my favorite dish! i make it all the time.

                    peppered steak with a side salad of rocket, iceberg lettuce, corriander leaves, watercress, red pepper, fennel and a dollop of mayo.

                    Was very tasty, even to someone who has only had steak twice in her life!

                      WOW only twice in 24 years! :yikes We have it at least once a week and some weeks twice! I love steak!

                        lol, I never used to eat red meat (except the ocassional bit of roast lamb) and I never cooked with any type of meat. Obviously things have had to change since starting Induction. It feels strange but it is nice to feel full and to have to chew food properly!

                        Off to the supermarket now to buy more goodies

                            Lamb chops for the protein tonight. I still haven't decided on the cooked veggie---maybe a broccoli and bok choy sautee or a cauliflower and turnip puree. A "waldorf" salad using jicama, celery and walnuts. The rest of the stewed rhubarb and heavy cream for dessert.

                              Have a huge test tomorrow morning so I am going to have a fast dinner tonight so I can hit the books. Thinking of a can of tuna, mayo and some celery stuff mixed in there....
