  • spiral slicer??

    Okay all you gourmet cooks before i go buy one tell me will they make noodles? or will it be sauced raw veggies?

    i saw them making noodle looking zuchinni using a spiral slicer on HOME PLATE yesterday and was wondering if ther would be good low carb noodles or would they fall apart if cooked? they were using them for a garnish she said and he just was eating them by the handful like a little kid does spaghetti which got me thinking they would be good low carb pasta subs.

    I've always been tempted to buy one of those spiral slicer things....

    Anyhow, zucchini noodles won't fall apart. I do them with a regular knife. I cut the zucchini into noodle shapes, then I toss them with a teaspoon of salt. Put them in a colander and let them drain for about 20 minutes. I rinse them in cold running water until the salt is removed (I taste a small piece of a strand to check the saltiness). I add them to the boiling sauce and let them cook in it. I guess you can steam them, then toss them with the sauce. Removing the excess water from the zucchini "firms" them up.

    When I make "zucchini macaroni and cheese", I still salt the zucchini and put them raw into the baking dish, cover them with the cheese sauce and bake it until the top is golden brown (just like regular mac and cheese).

        Daikon radishes, cucumbers and turnips will spiral nicely. Sweet potatoes and parsnips too, if you can eat them in your maintenance diet.

          Let us know how this turns out and which one you get! I love kitchen gadgets and noodles -- so any opportunity to combine those two has to be explored!

            I think you can do it with a regular but very sharp knife.

            I´ve bought a cabbage and I´m going to cut it thin and boil it and eat it + minced meat +cheese .... I´ll tell you how it goes...
