Okay this is exciting. While I am not on the legume rung yet and probably will not be, I have added black soy beans to my menu. They have 1 net carb per 1/2 cup. 1 carb. Because they are so high in fiber.
I used them in a chilli recipe and they good, a little tougher than regular black beans ( a little more expensive) but the flavor was much the same. I am going to try White Chili Chicken recipe that I found and call it Black and White Chili. I'll post the recipe if it works.
