  • College student in dorm-Need help finding food options!

I am a college student attempting Atkins (2nd time) while living in the dorm. I generally avoid the cafeteria, and all I have in my room is a small fridge and microwave.

My problem is finding menu options that can be done with my limited resources. I have been fairly successful so far, managing to get salads from the student union and relying on precooked chicken, lunch meats, and frozen vegetables, but it is getting kind of boring.

    Any suggestions?

can you use one of those hotplate things to cook?
one thing that i currently have that can be microwaved, is talapia. but you need a freezer for it.

Nope, no hotplate. The closest thing would be the warming burner on a coffee maker, but I think that might not be the best idea.

I don't think I've seen the omelets in the store, but I do take full advantage of porducts like pre-cooked bacon, sliced pepperoni, individually packaged servings of hard cheese, etc, but what I mostly eat at meals is chicken, salads, and steam-in-the-bag broccoli. So mainly my problem is variety of vegetables or preparation ideas.

Eggs are good and the ratio is perfect. A lot of grocery stores sell them already boiled. You can scramble eggs in the microwave wtih butter too and sprinkle a bit of precooked bacon and cheese on top of it for a good meal. When you cook them in the microwave, I melt the butter first then beat up the eggs in it and cook it at short burts, stirring.

Jicama is pretty cheap and it keeps well. I like it straight but others say they like putting lime on it. Avocados (although they may be pricey in your area) are good too. 1/2 a day really helps put your good fat up there.

Cream cheese rolled up in ham slices or smoked salmon slices.

Tuna, tuna, TUNA (I hope you like it) just add some mayo and maybe some pickle and you are good to go.

I eat most of my veggies raw: cucumber, jicama, bell pepper, radishes, green beans, tomatoes. (main ones I eat) If you need a dip, you can do Marie's chunky blue cheese, it has no sugar or carbs.

They're a little pricey, but I love Glad Simply cooking microwave bags:

                http://www.glad.com/simplycooking/

you can make omlettes in them, steam veggies, fish etc. They have recipes as well on that site.

They're about $3 for 10, they say they're for one time use, but i've rinsed out ones that i've just made veggies in and they've been fine. I wouldn't recommend this with fish or eggs though.

Are you not allowed to have a hotplate? It's so handy! I think every room in my dorm in college had one-but I'm going back 20+ years....
