Doing a little experiementing tonite. I have some CarbSense Apple Cinnamon Granola (4 carbs per half cup), but I thought it was a little strong for cereal. So I put whipped up 1/2 stick of butter, 7 packets of splenda. Added one egg then beat it. Added about 1/4 cup CarbQuick (about 2 net carbs), mixed that, then added the cup of cereal. Baked on parchment at 350 for about 12 minutes -- not too bad! They have kind of a shortbread texture. A little crumbly when you bite into them, but the flavor is a mild apple cinnamon. The full recipe came to about 20 cookies (teaspoon sized) -- so still less than 1 carb per cookie. You could use liquid spenda to lower the carb count some as well.
