  • Pau, I have a question about a Spanish Egg Recipe

    Hi Pau

    Several years ago I spent 2 weeks in Southern Spain, and our housekeeper made the most wonder omelette, or egg pie for breakfast, as I recall it had potatoes.

    Do you know what I'm talking about? If so, can we do the recipe with cauliflower or turnips?

    I'm not pau, but you're talking about a "tortilla". The Italians call it a "frittata".

    Really easy to make. Beat eggs, set aside. In a frying pan, sautee the veggies of your choice. Pour the beaten eggs over the veggies. Cook gently until the eggs are set. Either flip it over in the pan or stick it in an oven for the top part to finish cooking.

    Turnips and cauliflower work in this dish as do most other veggies.

      Hi! Sorry I didn´t read your message before.

      "not2late" explained very well our "tortilla".
      Now I´ll tell you the tips to cook a perfect Spanish "tortilla de patatas" (potato omelet):

      When the potatos are fried (cut them thin not in cubes), drain them and let them cold.
      Then mix them with the eggs in a bowl.
      And then put the mixture in the pan (just 2 drops oil in the pan) and do like "not2late" told you.
      Cook at low heat.

      That´s the original one but of course you can cook a tortilla with the ingredient you like more! :wave
