  • chicken recipes without using cheese?

    i have a minor cheese obsession and all of my best chicken recipes involve using some type of cheese in it...whether it is cream cheese, grated cheese, melted cheese. i've eaten enough for the day and i need some ideas for day (and future) for chicken without using cheese!

    A very quick and easy one of mine is to toss a couple of chicken breasts in a pan with a little olive oil. When they are browned, add some wine and a little lemon juice. Add two or three fresh sage leaves and finish cooking... doesn't take long. At the end when some of the wine has evaporated, add salt and pepper and a nice big dollop of thick cream. Heat the cream and serve. That's it!

        I simmer mine in chicken broth with red peppers and paprika I also like to fry them with a crust of almond and hazelnut flour.

          this is how i cook chicken, either wings or thighs

          rinse, dry, then season with sazon, red pepper flakes, garlic powder.
          then bake at 400deg till crispy

            I cook chicken different ways:

            Poaching: Submerge boneless chicken breasts in a pot of water. Add half onion to the water, a teaspoon of whole black peppercorns, and a bay leaf. Bring to a boil. Reduce the heat, cover it, and let it simmer for about 5 minutes. Remove from the heat. Keeping it covered, allow it to sit for about 20 minutes or until a instant read thermometer reads 165 degrees F at the thickest part of the meat. Let the chicken cool in the liquid. Remove the chicken and use or refrigerate. Save the poaching liquid because you can either re-use it for your next batch of chicken OR you can use it as chicken broth.

            With the poached chicken, I use it sliced in faux-jitas (use lettuce or lightly blanched Swiss Chard leaves in place of tortillas) or as a last minute addition to a weeknight stir-fry; shredded/chopped in chicken salad, omelettes, quiches, chicken soup, etc.

            Roasting: I use the dark meat because they remain juicy. Using skin on thighs or legs, rub it with a mixture of herbs and spices, place in a single layer on a shallow baking dish, and roast uncovered at 350 degrees F for about 30 minutes or until the juices run clear and/or an instant read thermometer reads at 165 degrees F. The skin will be crispy.

            I occasionally roast whole chickens too.

            Stir-fry: use chicken thighs or chicken breast. Slice thinly. Heat a skillet add oil. Cook in a single layer (don't crowd the pan) on one side, then flip over. Move to a plate and cook the veggies. Put the chicken back and finish the cooking.

              My favorite chicken recipe is simple. Marinate the chicken breast in Mojo Criollo and grill. A grill can be a lowcarber's best friend. I'm so excited that summer is almost here.
