Are a lot of nutrients lost in frozen vegetables? I'm about to start a veggie challenge and I want to find stuff that's cheep and will last longer than a couple of days. What are your opinions on frozen veggies?

Agree with the above. Frozen veggies sometimes have a higher nutrient content than the "fresh" veggies sitting on the store shelf. That's because many of the processing plants are right next to the field. So the veggies are picked, washed and flash frozen (while the "fresh" sit on trucks and in storage facilities before getting to your supermarket.)~Megs~

The secret to getting the most nutrients from vegetables is to not over cook them. "Steamer" bags are sold in the section where the trash bags and food storage bags are sold, and they work miracles with frozen vegetables.
I use the medium size bag for just the two of us, and fill it half full (the line is clearly marked) with any frozen vegetable. You can season the veggies and add butter, then microwave for four minutes. The vegetables are perfectly cooked and have the texture and taste of actually having been steamed.
It's a bonus to have vegetables done in four minutes, but the real joy, is no pan!

Great question! We love the Green Giant vegetables that come in a steamer bag. At this point I can only have the green beans and the broccoli. It really helps to have them on-hand for quick and easy veggies.

I was amazed at how good steamed veggies are with a pat of butter melted over them. Being brought up in a "fat is bad" society, I never ate them that way. But Oh My! Steamed asparagus with butter, Yummy!Originally posted by IrishMom82Thanks everyone! Now my next hurdle...actually eating them! haha!
