I am trying out loads of new recipes, and half of them call for wine in the recipes. I don't use alcohol in any form--what do you use in place of wine in recipes?

Sunny... here in Italy many many dishes have wine in them. In induction I used to use watered down wine vinegar . It works well, but for some reason it isn't as good if you just add the vinegar neat; maybe you need that extra liquid. For substituting wine, the vinegar needs to be very watered down indeed. I used to add just a few drops to half a glass of water and taste it. If it was similar to a very dry (and rather bad) wine in taste, I'd use it to cook with.

I tried using red wine vinegar, once, but I probably used too much. It made it way too tart. Maybe I will try it watered down. I really don't know what wine, sherry and the like do for the food. If it tastes as bad as it smells, I can't imagine liking the food it was cooked in.

Dry white wine is what is mainly used over here, so you could use a white wine vinegar. I couldn't conceive of cooking without wine, or a reasonable substitute.
