since I am going to have to change the kind of fats I have been eating I wanted to use up some of this good cream cheese I have and the leftover chevre ..well this is absolutely fantastic tasting ..hope you will try it!...do not be put off avocados are very good for you!
Avocado Cheese Cake
1 cup ground almonds
1/2 cup unsweetened raw coconut
1/2 cup any one or combination of the following, walnuts, oat bran, wheat bran, dulse or other type of nut or grain you are inclined to use
1/3 cup melted butter
pinch of salt and if you want you may add a packet of sweetener
mix well and then press into a springform cheese cake pan
set aside
For the FILLING
justdump all of the following into a blender or food processor :
2-3 (depending on size) nice perfectly ripe not mushy just firm and flavorful Hass avocados (you should taste it because if you don't you may be disapointed this recipe needs perfect avocados)
peel and pit them toss in the blender or food processor.
8 oz cream cheese
8 oz of chevre (you can use just cream cheese)
1/2 cup sour cream or whole fat yogurt
Sweetener of choice ( I made it with out and found it very good but the sweetner would have really perked it up) I would use a French Vanilla DiVinci syrup here as a sweetner about 2 shot glasses would be perfect!
1 shot glass of 1/2 lemon 1/2 lime juice ...
mix the whole thing up until nice and smooth then pour into the prepared pan .
Bake at 350 for 20 min turn down to 325 and give it another 20....check with a knife in the middle to see if it comes out clean.
let it cool slowly by first pulling the rack out and turning the oven off then when it is cool enough to handle take it and put it on a rack in an area with good air flow....
you could top with whipped cream
