  • canned pumpkin ?

    Does anyone know if I open a can and put the remainder in a tupperware in the fridge - how long is it good in there for?

    It is good as long as mold does not start to grow on it (like other veggies). I think mine last almost two weeks.

        I'm not sure...I love canned pumpkin so mine doesn't last long. I would say if it's sealed, a week or so.

            Just out of curiosity, what do you guys do with your pumpkin?

              I make this - occasional breakfast or treat


              And sometimes this:
              Pumkin “pie”
              About 1/4 to 1/3 cup pumpkin
              1 egg
              1/2 tsp pumpkin pie spice
              1/2 tsp vanilla
              3 TBSP half & half or heavy cream
              Splenda to taste

              I have made these as well (they are best frozen and reheated in micro wave in my opinion.)

              Pumkin muffins
              1 and 1/2 cup Golden Flax Meal
              1 tsp each baking powder and Baking soda
              1/2 cup Splenda
              2 tsps pumpkin pie spice
              3 eggs
              1/3 cup oil
              1 cup 100%pure pumpkin
              1/2 cup chopped walnuts
              1/2 cup water

              Makes 12 muffins

              Mix dry ingredients together, mix wet ingredients, then combine them and let sit 5 minutes, stir again and fill your pam sprayed muffin tins 3/4 full.
              baked on 350 for 40 mins.
              Per muffin 187 cal, 15 fat, 7 carb, 5 fibre, 5 protein
