  • hot sauce question

    anybody know what Edible food stabilizers are? They are having a sale on some bottles of Cholula in the marked down bins but it has that in the ingredients lists.

    No idea.. I e-mailed them and asked, I'll let you know what they say. Hopefully it's not something bad! Thats going to break my heart.

      wow thanks i was going to do that if nobody knew here thanks I'm more concerned because of soy issues it is low carb whatever it is

        They have stableizers listed in cream also. Haven't a clue

          That's strange that they'd use such a vague term. The stabilizer could be a gum (xanthan, guar, cellulose, CMC, etc.) or a starch

          Soluble fiber gums seem to be the biggest favorites for stabilizing. I'd buy the sauce. Even if it did turn out to be starch, it falls 2 notches below salt on the ingredient list. The sodium content per tsp. is 20 milligrams. That translates into about 50 milligrams of salt by weight. If the salt is .05 g per teaspoon, the stabilizer, falling below it on the list, would have to be less. Even if it were starch, you'd have to consume 20 teaspoons to get 1 net carb. That's a little less than 1/2 cup hot sauce.

            I have a soy allergy so i have to know if it is soy based Scott is why I wanted to know. the carbs are listed as ) so it is a low carb sauce but like I just found out looking for wings ingredients for EB there are soy hidden everywhere

              Gotcha!

              I don't think I've ever seen soy lecithin used as a stabilizer (always as an emulsifier), but you never know.

                They e-mailed me back (wooot and I get coupons!!) and the edible food stabilizer is (drum roll) Xanthan Gum.

                    I thought it was usually carageenan that was considered an endible food stabilizer?
