  • does anyone else curry????

I am just curious ...I know most of you know I am a curry whore but I have never seen anyone else post that they too were addicted to curries?....

LOL..from one hore to another. I adore curry. :nod

My mother-in-law has(so I've been told)a recipe that came from a friend whom was Indian. I used to have her make it for me on my birthday until going out was easier for her. I should get it and post it.

But I just made beef curry the other day, I'm not very good at it, but love the taste.

Do you have any curry recipes?

        Tonights curry went this way...

        Oven Curry Chicken

in an oven proof pan with a lid (I use the short wide la Creuset Dutch oven however any covered baking pan will work ...put heavy duty foil over a baking pan...whatever works

....toss in to the pan ..one cut up chicken that has been powdered with

.....1/4 cup of your favorite over the counter curry powder (I love Beta Pac blend from Jamaica in most Caribbean markets)

.....a dash of cumin powder some powdered or fresh ginger like 1/2 tsp powdered or 1 tbl fresh...a tbl of paprika, a good tbl of hot New Mexican Chile, 1 tsp of black mustard seeds

.....large dice whatever veggies you have I used 1 giant onion, 1 red bell pepper, 1 tomato seeded, 3 cloves garlic, 1 shallot, 1/2 bunch celery

....1/4 cup melted butter poured over the top and into a 425 oven for at least 20 min before checking and stirring then check and stir every 10 min until chicken is cooked and veggies are tender
        .
....at this point add 1/2 can of coconut milk (I just freeze the other half)
and let the chicken cook for another 10 min salt and pepper to taste

        ......remove from oven
squeeze of lemon juice or lime to finnish it off and a handful of fresh cilantro....

serve with a low carb tortilla if your there ... or a salad and some sour cream or yougurt to top it...

        enjoy

Nurselady, when I see my Mother-in-law a week from Sunday, I shall ask her for the curry recipe. I'll post it as she gives it to me, then we can make it low carb.

can you give me a good chicken recipe? Or the link to one. My friend made me some "chicken curry" last saturday and it was sooo good. I cheated and ate it with the bread (not naan, but don't know what it was called). I would love to make my own Atkins (Induction) friendly recipe. I will try anything once, so if you have any other easy recipe feel free to let me know.

I don't know how authentic my curries are and no real recipes. I either use curry powder or a curry paste, coconut milk, garlic, ginger root and whatever meat or seafood and veggies I happen to have. I made a lc chutney for garnish, maybe some chopped nuts on top. Sometimes I add some cauliflower "rice" instead of other veggies. It's such a quick and tasty way to throw a dinner together when I'm really not feeling like cooking at the end of the day.

                        **CURRY HUSSY HERE**

Curries are tops :icondance Sydney's got a lot of people from India, Malaysia, Thailand etc, and we've got an awesome array of "instant" curry mixes for things like Masman, Rendang, Tikka, Rogan josh, Vindaloo... whatever you want really! Just add fresh meat and veg. It's awesome and sooooo easy.

And you've got to love something that actually tastes *better* as leftovers than the original
