  • Zucchini Gratin

    Made this last nite for the DW and myself. Typical non cooking man here. Fixed steaks and this dish, yum-yum. We both went back for seconds. The guys at work always bring extra produce into work and leave it for whoever wants it. No one took the zuc so i thought i would experiment. This is simple and that is the way i like it. Hope some one gets some use out of it Almost forgot, we froze the remaining zuc!

    ZUCCHINI GRATIN
    2 pounds zucchini, sliced in 1/4-inch thick rounds, about 4 medium
    Salt and pepper
    1/2 cup freshly grated parmesan cheese, 2 ounces
    2 tablespoons butter, melted

    Butter a 10-inch pie plate or quiche pan. Put the sliced zucchini in a medium pot and cover with water. Bring to a boil and cook for 2 minutes; drain and rinse with cold water to stop the cooking. Arrange the zucchini in the pie plate in an overlapping circular pattern. Season with salt and pepper between the layers. Top with the parmesan cheese and drizzle with the melted butter. Bake at 400º for 30 minutes, then bake at 475º for another 10 minutes until golden brown.

    Makes 8 servings
    Can be frozen

    Per Serving: 73 Calories; 5g Fat; 4g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs

          Just checked back on this thread. Glad to see some may try it. By the way, we unfroze and had the leftovers tonight and they were just as good or better than the original. I was a little suprised. There was still some zukes left at my shop so i took them home. Washed, sliced, and then froze them. Never knew i even liked zuchinni

              I hate to admit I've never tried zucchini. Does it have a distinct flavor? I like most veggies so I doubt it will be a problem for me but the rest of my family are harder to sell on them. I've seen a lot of recipes lately calling for them so I guess I need to try. This sounds good. I made radish au gratin and it was so good! tasted so much like potatoes I should really do that again too.

                Zucchini does not have much taste. Whatever you put on it or under it will take over the taste Just my opinion.

                  I agree, Zucchini does not have a lot of taste but it's a great substitute for lasagna noodles. It's also great just sauteed in butter or olive oil with fresh basil and salt and pepper. And I have about 80 pounds of it in my garden...LOL.... When I get bored with it I make funny vegetable animals with tooth picks and other veggies and leave them on my neighbors porch and run....

                    LMAO thats funny, sounds fun too.

                    I have never had zucchini but that recipe sounds yummy. I think i will pick some up at the store soon.
