  • One Minute Muffin Rocks

    I got the below recipe by doing a search on this forum, I just tried it out and it was GREAT ! I don't know how I ever did Atkins without it.

    I premixed a weeks worth of the dry ingredients

    The only ingredient I changed was butter to I can't believe its not butter

    Muffin in a Minute-Suitable for Rung 3 of OWL, but can be altered for Induction

    Serving Size: 1

    1/4 cup flax meal (Induction only allows 2-3 TBLs? It's technically a seed---rung 3 of OWL)
    1/2 teaspoon baking powder
    1 packet splenda packet
    1 teaspoon cinnamon
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

    Cream cheese would go nicely, too.

    Notes: 1.5 net carbs.

    Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 9.5 g. fiber; 223mg Cholesterol; 284mg Sodium

    Stupid question, maybe, but what does it taste like? I've never had flax before and am chicken to go buy some unless I know I'll like it.

      Kinda hard to describe. First let me say this "It tastes good" and reminded me of eating something in the bread category.

      I guess it kinda taste like a bran muffin with a hint of cinnamon and a hint of sweetness.

      There is no overwhelming taste of anything, it was moist and went great with some butter spreaded on it.

        I gotta bump this up. I tried these and they do rock! They taste like a heavy bread (brown bread, I think it was called) and are awesome with butter and cream cheese on them.

              I'm going to try and make these. You should put the flax seed in a food processor or blender first to break open the shells. Otherwise the flax seed will pass right through you with your GI extracting all that good Omega 3.

                I made one tonight an i don't think it was all that, I am on day 6 of induction so I read the box and it said milled flax seed. That was the only ingredient. Low in carbs, I don't understand why it's not exceptable on the induction phase.

                  Some nuts and seeds when milled are no better then wheat flower when it comes to carbs and some may even contain gluten like substances, which is no good while in the induction phase. I can't wait tomorrow I begin the induction for real.

                    Flax seed is for Rung 3, Seeds and Nuts. It is allowed in small quanities (1Tbls). Page 76 DANDR, for Induction. To use for fiber to help with regularity.

                      Oh oh I've been eating this and I've just gone back on induction............so it's off the diet for a couple weeks.

                      Does anyone know if the oopsie is okay for induction. Tough to go without bread of anykind.

                        This is my 5th week on induction. I am down 17 pounds and am hanging in there. But I was having a hard time getting the fiber I needed plus I was craving something of a bread consistency. These muffins are good. I just fixed one up and it literally took me like 3 minutes. Thanks. It was just in time!!!!

                          Oopsies are good for induction. They are just eggs and cream cheese (or mayo)
