  • Cooking chicken quarters

    I have some frozen chicken quarters that I would love to cook up. If I am going to do them on the grill do I need to nuke them of boil first to make sure they are cooked in the center? Also, anyone hav some good seasoning to grill them with?

    One more question, if I roast them how do you get the skin nice and crunchy? Thanks.

    The trick with chicken on the grill is keeping a close eye on it and turning it constantly.

    Personally, I just bake the leg quarters. The skin gets nice and crunchy, especially if you turn the broiler on for a little bit just when they are done.

    Save the fat that comes off for use in sauteeing veggies for the upcoming week.

    As for spices, I like salt, pepper, garlic and onion powder.

      Oh, I didn't even think about using the drippings for sauteeing the veggies! What a great idea!

        Please don't boil or otherwise cook a chicken. If you're going to grill it, go for the grill.

        As for seasonings I agree with the others on the choices. As a side note, however, I don't fiddle much with chicken on the grill...cook chicken at a lower temperature, and preferably with indirect heat. It's best if you've got an IR cooker on the grill to sear the outside to get it nice and crispy, and then cook the chicken slowly.

        It should take some time to cook chicken, and if you're careful it will remain nice and juicy. If you rush chicken it turns into the world's worst meat on a grill. Turkey is about the same.

          What ever you do....don't leave the house with the chicken cooking all alone! (I did that recently and thanfully did not have to cash in our rental insurance policy).
