    Ok, I don't know where to post asking about substituting an ingredient on a recipe, Walnut Flax Muffins, that I found in a book which calls for soy flour and I want to substitute it with almond flour because I think almond flour has a lot less carbs than soy flour 3.78 to 22 grams ratio. It does contain flax seed meal, too, but I wonder if it will taste okay with walnuts and almond flour. What do you think? and am I in the right forum?

    I really want to know because I'm thinking about buying this recipe book "Easy Low-Carb Cooking". It's easy cooking for me than "Linda's Low Carb...". I know there is someone out there that has a lot of experience substituting ingredients in recipes. There is no "perfect" low carb recipe book in the world, and I find some of the recipes in the Atkins Diet book (no offense) outdated and non-organic. I've got the book and have used it (YAWN), and it doesn't have very many up-to-date carb foods information. You gotta admit, it's 6 years old and lot of progress has come a long way using new ingredients for up-to-date recipes.


    They even show re-runs about about this guy doing easy low-carb cooking but it's a little behind the times, and it's a good show for those doing OWL. So would anyone know anything about substituting almond flour for soy flour?

    Almond Flour
    almond flour has 3 net grams per 1/4 cup.

    on the same site:
    Soy Flour
    soy flour has 2 net grams per 1/4 cup.

    neither are allowed during induction.

      Thank you, jimmie for putting this in the right forum. I commend you for your successful weight loss and maintenance. I believe I've read the book several times and understand that Induction is 2 weeks and can be used longer IF DESIRED. I'm also understanding you that I HAVE to do Induction until I reach my goal weight? Right?

      I want you to know that I've been doing Induction for 16 weeks. During that time I lost 43 pounds in 2 months unhealthy and unsafe. I wasn't eating enough because I injured myself twice in one week and could not walk for 3 weeks. I live alone. I will continue to move forward in losing weight healthy and in a safe manner.

      Thanks for clearing up about the grams of soy flour. I've been reading some posts in this website about almond flour that are used on OWL. Am I reading that it is allowed on OWL?

      I don't recall reading any posts about anyone staying on Induction until they reach their goal weight. Are you saying it's better to stay on Induction for a reason? Am I misunderstanding about what the book says that doing Induction for 2 weeks or longer IS DESIRED or not, but in this website you're saying that you need do Induction much longer? Please clarify.

      I will like to continue doing Atkins in a healthy and safe manner. Please forgive me for offending you if I have in this post.

        i am not saying to stay on induction until goal. that is not what atkins is about. you're initial induction phase is 2 weeks. after that 2 weeks, you decide if you will continue with induction , which is extended induction, or whether you will move to ongoing weight loss, or OWL. i would never tell anyone to stay on induction for the entire time. that is not atkins.

        what i am saying is the soy flour, almond flour, any kind of flour, is not allowed on induction.

          Okay, now I understand you. When on OWL (meaning ongoing weight loss, right?), I can use almond flour, correct? I'm done talking about Induction since I was on it for 16 weeks, now we're moving on to OWL. Here's an example from the OWL forum:

          Pancakes

          1 cup almond meal
          1/4 cup water
          2 Tablespoons oil
          1 teaspoon Splenda
          2 eggs
          1/2 teaspoon baking powder
          2 Tablespoons flaxseeds

          Mix well and cook over medium heat. They are delicate, don't really puff up a lot, but so nice for a change. My favorite syrup with them is Cary's sugarless maple syrup.

          I have also made a great zucchini bread with almond flour. If I find it I will post it for you.

          We are allowed almond flour on OWL? It would be the same on any nut flours that is used on nut rung? Why would anyone post a recipe in the OWL using a nut flour, which by the way I make mine from scratch so no one can tell me I'm using flour, that will not make my WOE (way of eating) a successful weight loss?

          I've been reading other posts from other forums that are using nut flours, but not on Induction. I know and understand that, I'm just stressing that I'm on OWL and NOT on Induction. Again, I'm not on Induction. It seems that you mean no flour at all, including on OWL.

          Since you are coordinator/moderator and suppose to know what is OWL's do's and don'ts in succeeding at weight loss, please make me understand what you're really trying to tell me about using nut flours on OWL (ongoing weight loss), and not Induction.

            oh my gosh, are you mad at me? nothing in my post was suppose to make you mad.

            i'm the challenge coordinator, just for clarification.

            yes, owl is ongoing weight loss. it consists of all the phases from more veggies all the way to whole grains.

            and yes, the flours are used on the appropriate rung. now maybe one of the really smart girls will chime in here but here is my offering. soy flour would be added on the legume rung since is made from soy beans.

            and yes, pancakes made with those ingredients are allowed during OWL, again, on the appriate rung. for instance, they would not be allowed on rung 1, more veggies or rung 2, dairy [more cheese, etc.]

              On Going Weight Loss phase consists of a "carbohydrate ladder" that you climg, one rung at a time. When you begin OWL Phase, you start at Rung One---more Induction vegetables. As you proceed up the ladder you add more foods. Nuts and seeds (almonds, walnuts, pecans, pistachios, etc.) are all added during Rung 3. Soy is a legume, so it is added during Rung 6. And grains like wheat, rice, corn, oats, barley, etc. may be added during Rung 9.

              If you read the stickies in the OWL Forum, it is explained in greater detail.

                No, I'm not mad at you Jimmie. You kept mentioning Induction a couple of times, it seemed I was confusing you. I apologize for repeating myself every time I mentioned OWL in each message. Sorry for the misunderstanding!

                I couldn't eat nuts/seeds for 16 weeks, it was probably more. I was ready for the 3rd rung after I had experimented the the 1st and 2nd rung (which was a couple of months after, 5 weeks apart). There are only a few choices for me on the dairy so I have to consume calcium + A&D vitamins. I love nuts (especially almonds) and use sunflower seeds in my salads. Nuts are healthy snacks, too.

                Thanks Megs. I haven't reached or am not ready for rung 5 and slowly added rung 4. I experiment 1-2 foods at a time on each rung to see if my body accepts it until I've tested all the foods on each rung, and keep what I'm able to eat. I eat organic foods because it improves my health and I want to be able to get off all or most of my medications. I will continue to go up the ladder slowly. I'm also a semi-ovo vegetarian with the exception that I eat chicken twice a month instead of often. There are other vegetarian protein sources that I'm aware of. But I'm finding more choices here rather than The Atkins book because it is 6 yrs old, and there are new alternatives that I've seen here. I did find the Carbohydrate Ladder but I have to find it again. I've been disciplining myself to limit most carbohydrates in my eating plan. Fruits and vegetables (not starchy ones) have the lowest glycemic index besides most protein sources which helps digestion. I'll find the Carbohydrate Ladder later this week.
