Today for lunch i thought i would try dipping a fillet of Haddock in beaten egg and deep frying it. ( i used to love it coated in breadcrumb's or even better, done in batter) The result was actually better than expected, i thought the outside of the fish might have ended up a bit on the chewy side, but no, it was just nice and crisp.
At the same time i had about a cup full of cauliflower that i had cooked off (unsalted). Now, along with the water it was cooked in, i pureed it with the hand blender. In went a handfull of grated cheddar cheese followed by some double cream, gave it a heat through and then poured it on the fish.
I love fried fish, i like fish with a sauce, be it cheese, parsley, chopped egg, or just plain white. I like cauliflower done in a cheese sauce aswell.
So, i got the lot in one go, with a minimul amount of carb's........and very nice it was too
