  • "fold in" wha???

    I've never done much baking but I think this is a term from baking, what does "fold in" mean?

      Good video, thanks Megs, my computer doesn't "do" sound for some reason, but the video gave me the idea. I was folding whipped cream into cream cheese, I kind of remembered from Home Ec class 30+ years ago that it was supposed to be a gentle process...thanks for the tip, it really helped for next time!

          Charene, I made Crustless Key Lime Pie, I think I got it from Linda's low carb site, or from the recipe section of this board. Here's the recipe as I wrote it down in my 3 ring binder:

          1 sm package sugar free Lime jello
          1/2 c. boiling water
          8 oz. cr cheese, softened
          1 T lime juice
          lime peel, finely grated, 1 small lime
          1/2 c. heavy cream

          Dissolve jello in boiling water for 3 min. Beat cream cheese in med bowl w/electric mixer until smooth. Gradually beat jello into cream cheese (this makes a mess). Add lime juice and rind. Whip cream until stiff, then fold in to cream cheese-jello mixture.

          Pour into pie plate sprayed w/nonstick spray. Chill until set, do not freeze.

          4g carb per 1/4 pie; 3 g carb per 1/6 pie


          Notes: I think I got this from a post from Megs, and then saw it on Linda's and got the carb count. Next time I do it I may put another 2-4 oz. of cream cheese. Also, of course sugar free Jello has the dreaded aspartame. Maybe there's a brand out there that doesn't?

          I thought it was a pretty good treat, there's still 3/4 of it in the frig after 2 days so that tells you that sweet treats are not really my thing, but I would do it again, especially for a pot luck. My husband liked it, he thought it was like a meringue. Maybe next time I'd use a strawberry or cherry jello and decorate the top with fresh fruit...i.e. I think the basic recipe could be tweaked into various incarnations...
