After reading a post yesterday, I made a One-Minute Muffin (minus the splenda and cinnamon) in a bowl this morning. I carefully sliced down the middle and filled with ham, lettuce, and onions for an AWESOME sandwich! Yummo!

Hi,
Here is a modified omm recipe (a.k.a MOMM) from my good friend Rita:
Rita's MOMM
1 Tablespoon milled flax seed meal
1 Tablespoon ground almond flour
1/2 Tablespoon grated Parmesan cheese
1/4 teaspoon baking powder
1 Tablespoon melted butter or coconut oil
1 egg
1-2 drops liquid Splenda (optional)
Seasonings to suit...
I mix all the dry ingredients first in a small cup, while I melt the butter in a Grab-it-type dish in the microwave. Take out the melted butter, add the egg and whip with a fork.
Add the dry ingredients and any seasonings you are adding and mix with the fork until well blended. I also like to add a pinch of salt, onion and/or garlic powder, parsley flakes. For a sweet version, add DaVinci flavorings instead.
I nuke in the microwave for 1 minute and 20 seconds, or when done in the center. Take it out of the microwave, use a fork to ease it out of the dish, and let cool a few minutes. I then slice it like a bun, and fill with whatever! You can butter the bun, or use mayonaisse, you can use deli sandwich meat and cheese, I also add bacon, or a breakfast sandwich with sausage patty, egg and cheese. These are great for lunch- they hold me and I frequently do not need my HB egg at 3 PM to get me through til dinner. I make these the night before for lunch and then nuke for a minute and I have a hot, satisfying sandwich.

This is how I've made mine:
2 Tblspns Flax Meal
1/2 tsp baking powder
1 egg
1 tsp butter
Mix flax meal and baking powder, then add egg and butter. Then microwave for one minute!

I use the same recipe you do. So far I haven't tried it without the cinn. and splenda. I sliced mine into thirds cause I felt so guilty having something so good! LOL
It's like a little dessert with cream cheese on top! So YUMMY! And the fiber is great! Almost like subtracting the whole dang thing! Woo Hoo!
I am staying on extended induction so I have to be careful not to have too much. (another reason to slice into three servings)
Anyway, guys should try it. It is worth the minute!~~~Donna~~~

I make a savory version when I'm not in the mood for sweet and I top it with sour cream. Totally delish. In place of cinnamon and Splenda, I use dill, freshly pressed (pr minced) garlic or garlic powder, and olive oil in place of butter. It's quite delicious and the sour cream is just the right topping. It's feels so decadent to enjoy a "bread" and that's probably the biggest plus for me. I need that bread texture and this really IS a bread, just not made from wheat.
If you haven't yet made a MIM (as I was told it's called), do yourself a big favor and try one.
My sweet version (ginger, cinnamon and Splenda) gets eaten with cream cheese. It's like having a little cupcake. Sometimes I'll put a dash of vanilla extract in. Again, decadent
I tried making one with cocoa powder, but it didn't have enough chocolate flavor to make me try it again. I recently did an almond extract version and it was very aromatic and tasty. So many ways to play with this and enjoy daily. I eat mine at breakfast with a fried egg, not together, but just the egg on its own and the muffin on its own. Very filling and helps with elimination the next morning.
