Mock Potatoes were "runny"....

  • Mock Potatoes were "runny"....

    The mock potatoes were GREAT, but I felt that the "potatoes" were a little runny.
    After boiling them, I drained the liquid, and then put it into a blender to "mash".
    What can I do differently so that "potatoes" won't be so runny?

    I think I've perfected this recipe. When cooking cauliflower, I only boil about 5 minutes and then let it sit for in the hot water for about 15 minutes. I then put in collander and blot with paper towel. I leave in collander for a couple of hours. I then add the cauliflower to the cheese, cream cheese, onions, sour cream and then put in dish and bake in oven about 30-45 minutes - till brown and bubbly. No need for the blender.
