  • banana peppers stuffed with..???

    So a good year in the garden. Have lots of banana peppers. Was thinking it would be a good idea to split them down the middle and stuff them and freeze them and that would be good for lunches. Gets my veggie in and my veggie carb count up. Sounds like a good idea, right?

    Now what to stuff them with. I think if I did just cheese or cream cheese that that would be too much cheese.

    Would prefer ideas that are freezable but other ideas welcome.

    I would make a ground beef mixture. Something that would taste rather like taco salad meat. I saute ground beef, add diced canned tomatoes, canned chili peppers, onions and red pepper, and garlic. If you cooked it down and then added some shredded cheese and mixed it all up, I think it would make an awesome stuffing!

        you can make a soup/sauce base using the peppers. Roast them and peel off their skins and remove the seeds. Toss them into a food processor and puree them. The base is freezable. For soup, add water or broth to the consistency you want. If you want more flavor, use an equal amount of tomato puree in the soup.

        For stuffed peppers, I like using a very flavorful stuffing, like sausage meat. If you want something less meaty, you can use a flavorful fresh cheese like goat cheese. And if you don't want meat or cheese, you can finely chop walnuts or pecans, saute with butter or oil and chopped onion. Add alittle heavy cream and bring to a boil. The cream will thicken the nut-onion mixture. Season with salt, pepper, maybe a herb like thyme or sage. Cool, stuff and bake in the oven until hot. The nut mixture has a very "meaty" taste.
