Some people love them. They slice them like you would regular fries, then fry them.
Personally, I don't think they cook well nor do they taste good that way. The jicama tends to turn very brown, very quickly. It never softens. It also absorbs the oil, so you get a burnt, hard, but greasy "fry".
Turnips do better as fries, imo.~Megs~

I assume you are talking about Jicama ? I spent ten minutes staring at your thread and my mind kept turning the word into 'Jamaica Fries'. Oh well.
Anyway, yes, Jicama is great for many things, but it makes a downright lousy fry. The taste and texture are all wrong for potato, in fact, the biggest similarity of Jicama and Potato are that they look similar raw.
I made butternut squash fries a couple weeks ago, which were awesome, tasted, very similar to potato, but a little bit sweeter/nuttier. However, Butternut squash is a bit carby, and I believe it ends up falling in one of the last rungs of OWL.

I've sliced them more like potato chips and fried them, they take along time to crisp but if you eat them while they are still hot, they're not bad at all IMO. Problem is, they don't hold the crisp well at all so you can't make a batch to eat later, unless you like the soggy taste.

My oven fry recipe was not too good -- til I sprinkled spenda and cinnamon on them! Not good fry material, but most excellent as a sweet! Some people like them raw as well, and see them as more of an apple substitute than a potato substitute. Let us know what you did with it!277/180/160ish -- started 7/28/03 --F
