I made some pumpkin flax muffins this weekend and have some canned pumpkin left over. I'm not a huge fan of pumpkin on its own, but I'd like to try some new recipes using it. Any ideas?
I'm not fond of sweet pumpkin dishes, so I tend to look for savory pumpkin recipes like soups. In fact, I'm having a nice bowl of pumpkin soup right now!
For pumpkin soup, you sautee about 1/4 cup finely chopped onion and finely chopped celery in oil or butter, until the vegetables are soft. Add a finely minced clove of garlic and continue cooking. Add the canned pumpkin and let that cook a bit. Then add 2 cups of chicken broth and 1 cup water. Bring to a boil. Then simmer. If the soup is too thick, add more water to get to the consistency you want. Add salt and pepper to taste. I serve it with a tablespoon of heavy cream or sour cream on my serving. Some people like the flavor of curry, so they add a teaspoon of curry powder to their pumpkin soup.
I also use pumpkin as a mashed sweet potato substitute. It's great with roast chicken, turkey or pork chops. Basically, you dump a can of pumpkin into a heavy saucepan. Put it over medium high heat, and stir until most of the water cooks out and the pumpkin looks dry. Remove from heat, add a couple tablespoons of butter and a couple tablespoons of heavy cream plus salt and pepper to taste. It shouldn't be runny but like a soft mashed potato.
The recipe which you have suggested 'no2lat' is also our favorite, garnishing with mustered seeds and coriander leaves adds to its flavor. We use it a side dish and it tastes good with bread also.
And I had once tasted "pumpkin pie cake" in a San Antonio restaurant. But no idea about how it is prepared.
