  • Favorite slow cooker recipes?

    It's getting chilly around here and I'm in the mood for some slow cooked meals. What's your favorite low carb ideas for the slow cooker/crock pot?

    I seldom follow actual recipes for my slow cooker. All I do is put some chopped-up veg - turnips or celery or celeriac (celery root) - in the bottom of the pot while browning the meat then lay that on top. I usually add some water to the pan juices and make sure all the flavourfull 'bits' are gathered up and pour that over the meat then sprinkle spices or herbs on top then leave it to cook all day.

    My husband likes his meat very tender so I usually leave it on the 'high' setting all day so add about a cup of liquid to avoid it drying out - if you are turning it down to the low setting for most of its cooking time then about 1/2 cup should be enough.

      Hi,

      I haven't used my crock pot in months but this morning I had the idea to put some beef short ribs in the crock while I ran errands all day. I put the short ribs in the crock and then I put in a small can of whole tomatoes. I left it all day and when I came back home, I had some and it seemed to be "missing something". I decided to put a splash of vinegar, a splash of soy sauce and a few drops of concentrated liquid splenda in and mix it up. It was absolutely fabulous. The beef had fallen off the bones so I removed them and once I mixed everything it fell apart like shredded meat. It was hard not to eat the whole pot but I had to limit myself because of the carbs in the tomatoes. I will definitely make this again. It would make a great lunch at work in the winter. I might even try a bit of cayenne pepper in it next time.

        I've only used mine a couple of times during the Atkin's.
        I'll throw in a rolled lamb flank, after i've brown it off. Some chopped green onion's, chopped parsley, freshly ground black pepper and then cover it with chicken stock. It get's left over night or until it's nearly falling to bit's, and then left to go cold. Then i 'll have it when i get home from work.
        I usually cut it into 3 bit's, unroll it onto a tray and then give it a blast under the grill until the fat is nice and crispy.

          Braised beef short ribs: brown the short ribs in a skillet. Then brown a chopped onion. Put them in the crockpot. Add a whole chopped tomato. Salt to taste. Then measure out a tablespoon of whole allspice berries. Put in a sandwich bag and pound them with a rolling pin or a heavy sauce pan. Add the crushed allspice to the short ribs. Add about 1/2 cup water or broth. Turn the crockpot on high and cook until the meat falls off the bone. Remove the meat. Put the veggies and any cooking juices into a blender and puree until smooth. Serve the meat with the sauce on the side.

          It's a great do ahead meal because if you cook it the day before you can skim off the excess fat.

          And don't skip using the freshly crushed whole allspice berries---that's the "secret" ingredient.

          If you don't like beef short ribs, you can use beef stewing meat.

          2 meal chicken in a pot: Put a whole chicken into a crockpot. Add a coarsely chopped onion, two whole stalks of celery, a bay leaf, salt and pepper and enough water to go halfway up the chicken. Cook until the chicken is cooked through. Remove the chicken. The chicken is now poached and can be served with simple sauces like tomato salsa or pesto etc. Save the cooking juices because that is now a chicken broth. Skim off the extra fat. The next day, you can saute Atkins veggies, like celery, onion, turnip, etc. add the broth and bring to a boil, then add the leftover chicken meat for a hearty chicken soup.

            Lets keep this post going.....
            As a girl new to Atkins and new to the gym, I have realized the value of the crock pot.

            Tonight I'm doing cornish game hens that I put in this morning, they marinated in butter, splenda, lime juice and soy sauce and will cook for 6 hours. Then we're adding in some of those microwave steam veggies......

              I'm too lazy to prebrown my meat I do like the crockpot though. Boneless shortribs with peppers and paprika and a touch of broth. Chuck roast with mushrooms, onions, allspice. Chicken with tomato and taco seasonings. Lamb, eggplant and peppers with masala spices (the eggplant melts down into a nice sauce)

              Well, basically whatever strikes me at the moment The only problem I have with the crockpot is that what I feel like cooking at the moment might not be what I feel like eating 8 hours later!!
