  • Mache, have you tried it?

Today I decided to try a new vegetable. Mache also known as lamb's lettuce. It was so good!!! I made a little salad with 2 cups of mache, 1 tbs. cream cheese, 6 cocktail shrimp, salt and pepper to taste with just a little fresh lemon juice. Put it in the microwave for 30 seconds, took it out, stirred it up and it was sooooo good!!

Well, I decided to look up some info about this and came across this and just thought I would share it with you all:

Anti-stress, anti-fatigue and chock full of vitamins, Lamb's Lettuce doesn't lack spirit! A cure for the effects of winter
Tired, run down, listless… it's no coincidence that our energy is low in winter. Winter is a difficult season for the body. It's more vulnerable, and our immune defences tend to weaken. The best remedy is vitamin C, a true guardian of our immune system. Did you know that 150 g of Lamb's Lettuce (one basket, or about 5 oz.) contains 95% of our recommended daily intake of vitamin C? Lamb's Lettuce brings along all the vitamins and minerals we need to recharge our batteries. What more could you want?
    Natural anti-fatigue properties
Specialists say that in winter we tend to suffer from a lack of B group vitamins, particularly vitamin B9, which has anti-enemic properties and combats fatigue - even more so than vitamin C which is the defender of our immune system. Found on the market from October until March, Lamb's Lettuce is one of the rare green winter vegetables. Beneath its chlorophyll, these little leaves contain large amounts of an orange pigment called beta-carotene, a natural anti-oxidant that combats cell aging. It's even better when combined with vitamin C, as is the case with Lamb's Lettuce. Together these two vitamins help us stay in top form throughout the winter.
    A First-Course "Tonic," for 2 people
Combine one bag of Lamb's Lettuce with a grapefruit that has been peeled and cut into small pieces. Add a few peeled pink shrimp. Season with olive oil and the juice of a lime.
    Natural Anti-Stress Properties
Thanks to its vitamin B9 content, Lamb's Lettuce is a food that has natural anti-fatigue, anti-stress and anti-depressive properties. 100 g of Lamb's Lettuce contains almost half the recommended daily amount of vitamin B9.
    A Friend of Your Figure
With only 19 calories per 100 g, Lamb's Lettuce is an ideal slimming food - a delicious and well-balanced addition to a diet.
    Useful tidbit
Lamb's Lettuce essentially contains B-group vitamins and vitamin C.
Since they are water soluble, they can be easily lost. Therefore it is recommended that you don't soak or wash Lamb's Lettuce in large amounts of water, so as not to lose the vitamins.
Why is Lamb's Lettuce so good for us?
It contains a third more iron than spinach - take that, Popeye!

I grow it. It's a very easy veggie to grow, like most other lettuces. However, since it is a lettuce or lettuce-like veggie, I tend not to use it as the main source of my veggies because there are other veggies that have good nutritional profiles for the vegetable amounts we are allowed during the Atkins weight loss phases.

I do think it's a good addition to other veggies. I mean, I get sick of eating certain types of lettuce, I hate iceburg...but I can see how this can be very tasty with many different recipes!
