    I'm thinking about Thanksgiving which is coming up next month and giblet gravy.

    I've always thickened it with good ole Pillsbury's flour. But this year wheat flour is no longer on the menu. Anyone have a good substitute?

    There are several ways to thicken sauces in a low carb way.

    One way is to use gum thickeners like xanthum gum. Personally, I don't like using the gum thickeners because they have a slimy texture that makes me think I'm eating snot. But other people don't seem to mind.

    Another way is to thicken the sauce with cream: Add heavy cream in an almost equal proportion to the liquid and boil it to reduce the liquid by half. The gravy should be thick enough to lightly coat the back of a spoon.

    Another way is to cook a combo of celery and onion with the liquid (I would say about a half cup of each to every 2 cups of liquid.) Cook the until the vegetables are very soft and the celery is almost translucent. Then put the vegetables and the liquid into a blender and puree until very smooth. Bring the mixture back to a boil. If it it too thick add more liquid to get the consistency you want. This is my preferred method for making gravies.

      I've heard coconut flour works well for thickening gravies and you only need a little bit. I've read where you make a roux with it to make the gravy. I haven't done it yet, but I will be giving it a try. I wonder if the same thing can be done with vital wheat gluten?

        Thanks so much! Not only a response but choices! I can see I'm going to have to do a few trial runs before Thanksgiving. And there's a brand new, never been used food processor sitting on the kitchen sink waiting for me. . . .

          I tried the celery & onion suggestion. Thanks very much! It worked a treat. And the onion was a very good taste addition to the gravy, too.

            coconut flour curdles when used as a thickener! it tastes fine but is pretty ugly indeed.
