I hope I spelled that right...

I'm referring to the Greek dish where they put a hunk of kasseri cheese on an iron skillet - like an omlet skilled - then set the top on fire.

I would love to understand how to make it because it is DELICIOUS!

    Anybody know?

This was the first time I'd had kasseri cheese and it's UNBEVLIEVABLY yummy!

    Re: Saganaki

    Here's a simple recipe.

It's soaked in brandy; cheese doesn't normally burst into flame when you take a match to it. All the alcohol burns off in the flame though, so it should be all right. Sometimes the cheese is coated with flour before cooking, so make sure you ask about that if you order it in a restaurant.

    (I hope it's okay to resurrect a months-old thread.)

        hi
i am from greece and my brother is a chef so...... i know the real recipe
I am telling it to you as it should be done but you have to avoid the flour i mention.

You put olive oil or sun flower oil in a pan. You want it to be really hot and enough to cover the kaseri slice (at the super market you ask them to cut it in thick slices). If you have a fryer is better. You put the kaseri in a bowl of water just for a second and then to a bowl of flour to cover it and then you put in the pan.Since you are on atkins dont do the 2 steps and put it straight in the pan from the fridge. You let it in the oil until it gets golden (or more depending on how u like it) and u turn it the other side.
        Enjoy!!!
you could also have fried feta (we called it feta saganaki) but you will have to use the microwave oven
put one thick slice of feta in a plate, add a slice of tomato, a slice of pepper and a spoon of olive oil (i put more olive oil because i like it). If you want you add a pinch of oregano and/or some tabasco. Put it in the microwave for 2 min in high. It seems a little like it melts. Again you can leave it more time in or less!
