    Hey all,

    We'll have turkey cevapcici at the canteen on Sunday, and I was wondering if they are 'legal' for OWL rung 1. I checked the web, but I can only find recipes and nutritional info for beef/pork/lamb cevapcici. Because the turkey meat is leaner (and I am bad at cooking), I don't know if they add bread in the recipe to keep the 'rolls' together. Any ideas?

    I have eaten them before and they are much softer than cevapcici made from other meats. But it might simply be the turkey, dunno.

    Also, do you happen to know how much sodium they have? Are the values similar to the other cevapcici or do they add more salt to compensate for the lack of fat in turkey? Usually low fat stuff has more sodium in it...

    you'll have to ask the cooks what the ingredients are.

    If you want to make them yourself....bread, cracker crumbs, oatmeal and other grain products that are added to meatloaf, meatballs, etc. are added for 2 reasons: 1. to extend the meat (so you can feed more people) and 2. to make the dish more tender.
    The low carb way to accomplish this is to use cooked, minced vegetables, such as onions, celery and mushrooms. These things will extend the meat and will tenderize the final product. For OWL Phase, finely chopped nuts such as walnuts, pecans, pistachios and almonds accomplish this.

    Eggs are usually added to these minced meat things in order to help the ingredients "stick" together.

      Thanks, Megs!

      The food is cooked in some other place and only served at the university canteen, so there is no cooks I can ask. I think I'll just skip them, it's the safest way to go.
