  • Goose Fat?

Has anyone used goose fat in cooking? Is it similar to chicken fat or does it have a stronger taste? I bought a couple of jars from Lidl this week but am not sure which sort of recipes it would suit.

    Re: Goose Fat?

Goose fat is supposed to be "richer" as far as I know. Of course it's wonderful for cooking potatoes in (n.b. only for OWLIES at the starchy veg rung, with caution!), so maybe some other veggies would do well fried in it... like celariac chips... or zucchini slices?

      Re: Goose Fat?

Grandma and mum use goose fat pretty often (my grandma raises geese). The flavor is a bit different than that of the chicken fat - not sure if "stronger" is the word - but I like it more.

When I was home last spring, mum used to make my morning omelets with goose fat and they were pretty good. Not as "fluffy" as when cooked in butter, more on the crispy side. My grandma found better uses to the fat though... she made me chicken rinds (like pork rinds, but homemade using the skin from chicken... she raises chicken, too ) fried in goose fat. They were awesome! She also cooked sauted leek and salmon, both in goose fat. Delicious!

Oooh I havn't had goose fat since I was a kid! We raised the buggers and they were mean. It was nice to have the fat cause I knew the dang bird was dead and it couldn't nip me in the butt when I wasn't paying attention!! I don't know if this sounds wierd or not but it seemed to "fattier" than chicken fat. can't really explain that any better.
