  • Pumpkin chips...

    My neighbor was cleaning out her root cellar yesterday and gave me two sugar pumpkins. They were still in good shape. So, I did some experimenting with one of them today.

    They're induction friendly because pumpkin is on the other veggie list.

    Pumpkin Chips
    Fresh pumpkin
    Peanut oil
    salt

    Peel the pumpkin. Slice into wedges. Use either a mandolin to slice the pumpkin wedges into very thin slices. Or if you have a very sharp knife and very good knife skills, go for it.

    In a large pot, pour about 2 inches of peanut oil. Heat it on low. Add a few test slices. Cook the slices gently, until they become very soft and almost translucent. Then turn up the heat, and allow to fry until crisp. Pull out of the oil and put on absorbent toweling to remove the excess oil. Salt and season as you want.

    Store them when they are fully cooled in an airtight container.

    Do the test chips because depending on your stove or fryer you might have different results and you don't want to burn a larege handful on the first go.

    Pumpkin Fries
    Fresh pumpkin, peeled and cut into wedges.
    Peanut oil
    salt

    Cut the wedges into 1/4-1/2 inch slices on the bias (diagonally). Cut these slices into 1/4 - 1/2 inch pieces too. You want them pretty uniform in thickness to ensure proper cooking.

    Into a large pot, pour 1 1/2 inches of peanut oil. Heat over medium heat. Cook the pumpkin fries in batches, until soft and tender all the way through. You don't want them to brown. Remove and continue cooking in batches.

    Turn up the heat to medium high. In batches, put the pre-cooked pumpkin fries. Cook until they turn a golden brown. Remove and drain on paper toweling.

    Salt and season as you want.

    hese get about as crispy as sweet potato fries (if you've ever had those) and taste like them too.

    do the chips get crunchy like the sweet potato ones do?

    I live pumpkin so you know where I will be wonder if OWLers could do that with winter squash too?

      I decided that since I do like pumpkin that I would grow severl vines this year in my garden.

      I'm drooling just thinking about pumpkin fries sprinkled with kosher salt.

        The chips get crispy like those gourmet sweet potato chips if you cook them at two different heats. In my test batch, I heated up the oil until it was pretty hot, about 375. And tossed in a couple of the slices. They turned brown very quickly and were soggy (tasted good, by the way)

        The second test batch I lowered the temp and cooked on low until they were translucent and very soft. It was really like "simmering" them in the oil. Then I increased the heat and cooked them until they were crispy and golden. I have them sitting in plastic bag on my counter right now and they're still crisp like regular chips. I have a feeling they'll remain crispy too. But to be sure, I'll make the sacrifice of bringing some of them to work tomorrow for lunch and I'll see how they travelled.

        The fries don't get as crispy as regular potato fries, but have a similar texture as sweet potato fries (still very good, imo!).

        I'm thinking if you toss the raw pumpkin with salt, put it in a colander and let the excess moisture run off, you might be able to skip the first frying. If I don't do anything with the other pumpkin this week, I'll give it a go next weekend if I have time.

        I'm pretty sure you can use winter squash like acorn or butternut if you don't have a pumpkin handy, since they have the same overall texture.
        I was pretty pleased with the pumpkin chip. Now I have another veggie chip I can make and eat. (Celery root/celeriac is the other one!)

        Now if I get over this deep frying phobia and actually buy a deep fat fryer, I might do some more experiments with other veggies. lol.

            I use peanut oil because it more or less tasteless and it has a high smoke point.

              Well, I put them into a sandwich baggie. They travelled well. They're still crispy. The ones that weren't well drained of the oil are alittle oily, but not bad.

              By the way, I'm being a total kid right now, eating my turkey sandwich with the chips stuffed into the sandwich....
