  • Muffin in a minute help

    I love the idea of making muffin in a minute. But, I'm not fond of the gritty, dark and heavy flax meal.

    Has anyone made this with almond flour or anything else?

    why is your flax meal gritty? Do you grind it yourself? I have never bought meal, I buy seeds and grind them fine, and they aren't gritty at all. A 10 dollar coffee grinder works great.

      Mine aren't gritty either, and I buy flaxseed meal -- Bob's Red Mill brand, available at my local Kroger. It is dark. Not sure what you mean by "heavy," but I wouldn't use that adjective to describe my muffins.

      As to your question, no, I've used nothing but flaxseed meal.

          I've used Bobs too and I find it gritty and heavy. My mom uses golden flax meal and she says its better. I haven't tried it yet though.

            You can make muffins with almond flour and whey - I don't know that you can make it like a minute muffin. You will have to be on the nut rung to do it though.
