    I found these on the egg web site, and while they are not specifically LC, I wanted to post them, and turn them into LC.

    1) Taco Frittata

    1/2 lb. ground meat
    1 teaspoon minced onion
    1/2 package taco seasoning - use this or create one's own?
    1/4 cup water
    10 eggs
    1 cup cheddar cheese
    Salsa
    Tortilla chips - omit
    Shredded lettuce


    Brown meat with minced onion in 10-inch skillet. Drain. Add taco seasoning and water; simmer for 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Serve with salsa, lettuce, and chips, as desired.

    2) Pizza Pizzazz

    8-9 eggs, beaten
    1-2 ounces sliced pepperoni
    1 cup pizza sauce - I don't know what this comes in as.
    1 cup shredded mozzarella cheese


    Spread pepperoni slices in the bottom of a 10-inch skillet over moderate heat. Beat eggs and gently pour over ingredients in skillet. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Spread pizza sauce over eggs and tip with mozzarella cheese for the last couple of minutes cooking. Cut into wedges and serve.

    Sounds yummy! I make "chips" out of shredded cheese spread in a nonstick fry pan and lightly browned on both side, take it out, let it cool and break it into "chip" size pieces! They'd work great for this recipe.

      I do frittatas like that all the time---they make a nice change for dinner or for weekend brunch.

      Use your own taco mix or use one that doesn't contain added sugar or starch.

      For pizza sauce, you can use some tomato paste and spice it up with oregano, parsley, rosemary, onion and/or garlic powder.
