    Here is a recipe for Gobhi Kari (Cauliflower with scallions and black mustard seeds). I tried to enter it into the recipes section but I guess I made some kind of mistake because it didn't work. Anyway, I don't have the calorie or carb counts, but these are all legal ingredients. My DH and I eat this as a side dish to any kind of meat, even steaks! I hope you like it and if you do try it, please let me know if you like it!

    Ingredients:
    1 small head cauliflower (~1.25 lbs)
    2 bunches of scallions
    4 Tbs vegetable oil or ghee
    1/2 t black or brown mustard seeds
    1/2 t. tumeric
    1-2 green chilis chopped or 1/4 t red pepper
    1/2-3/4 teaspoon salt (to taste)
    6-8 fresh or dry kari leaves, slightly crushed (optional)

    Procedure:
    1.separate cauliflower into very small flowerets (about 1/2-3/4 in pieces) wash in cold water & drain.
    2. Trim the root ends of the scallions and chop them (including the green part) into 1/4-1/3 inch pieces
    3. Measure out the spices and place them, the vegetables, and 1/3 cup hot water right next to the stove
    4. Heat 3 T of the oil over high heat in a large frying pan or skillet. When the oil is very hot, carefully add the mustard seeds. Keep a pot lid or spatter screen handy because the seeds may splutter when added. When the mustard seeds turn grey (about 3 min) add tumeric, chillies, and salt stirring rapidly. Add cauliflower. Stir to distribute the spices and add the hot water. Reduce heat to medium low and cook, covered, until the cauliflower is cooked to crispy-tenderness (15-20 min) Uncover, increase heat to medium, add scallions and stir fry to evaporate any moisture remaining in the pan and to lightly brown the cauliflower and cook the scallions. (about 5-10 min) Stir in the remaining tablespoon of oil during browning. Add kari leaves, if you are using them. Stir to mis, check for salt, serve immediately.

        Kari Leaves: Olive-green kari leaves (also called curry leaves), a distant cousin to the citrus family, have a delicate aroma and flavor and are available in the produce section of Indian grocery stores. They last up to 3 weeks in the refrigerator or in the freezer for up to a month. The dried version of these leaves, I find, are not as good.. If unavailable, omit from recipe.

          the dried version are a waste of money I think!...I have used Kefir lime leaves instead they are good for curries although not quite the same!...and I have a tree of them ...

            I LOVE Kefir lime leaves, especially in Thai dishes. Like my fave soup, Thom-Ka-Gai. Of, course I have no idea if that is how you spell it. I didn't know you could grow Kefir Lime plants yourself. Are they hard to grow?

              I can not spell it either it is spelled a bunch of ways I have noticed and I make it all the time! it is pretty low carb if you are on the nut rung!!! keffir lime goes good with Indian curries as well ..I only get fresh curry leaves in Canada so they are a rare treat for me!....
              I make a mean Island curry and Malaysian curry ...well I curry everything......

              by the way the cauliflower is wonderful I am having the leftovers for lunch with a salad today ..I did have some string beans and tossed them in as well and they were perfect together ....thanks so much for sharing that!!! :icondance :icondance

                I am glad you like the recipe. I have also added string beans to is before, and I too thought it was a perfect match!

                  Oooo, ooo ooo, I think we have another cook. I am so excited. I can't find black mustard seed here, so have copied your recipe in MY BOOK and will try it when I get home. Oh yum

                    do not wait make it anyway Lynne!!! I know you have this thing about it being exact first time but this is really good so do not wait!!!...I had the leftovers with curry tonight it was amazing.....

                      For Spices, when I am in America, my advice is Penzeys. They are based in Wisconsin, and have several stores in the midwest, but also do mail order. Their catalog is FULL of information and recipes. And their prices are moderate, but the quality of the spices is first rate! Also they are a really well run company which treats its employees good. Anyway, they sell mustard seed. And they have a website
                      I think the mustard seeds are the best part of this recipe, I love the texture that they give!
