I have been trying to incorporate some new veggies into my menu..even though I really only like a few. I have learned the last few months to like many more just by trying different recipes.. So, I bought some zucchini and am looking for some ideas of what to do with it???

Its good steamed w/ butter and salt and pepper. Its also good if you dip it in egg, coat it with grated parmesean cheese and fry it til its golden brown, eat it like that or dip it in your favorite dip such as ranch or blue cheese dressing!

You can slice it into rounds and saute them in olive oil with some garlic.
You can shred the zucchini, saute in butter until soft, then add some heavy cream and continue cooking until the cream is absorbed. Salt and pepper to taste.

Hash Browns - Low Carb Zucchini
(This recipe yields 2 servings)
· 1 cup grated zucchini
· 2 eggs -- beaten
· 1 Tablespoon grated onion
· 1 Tablespoon canola oil
· 1 dash onion powder
· 1 dash garlic powder
· salt and pepper to taste
Combine all ingredients except canola oil in a medium bowl. Stir until well combined.
Heat oil in a large skillet over medium-high heat.
Spread hash mixture in skillet. When brown on one side, turn and cook the other side.
