  • Anything Chocolate?

    Lord I love chocolate ..it is a whole body thing with me....do you guys have some favorite recipes for Atkins friendly Chocolate dishes.. I posted my mole recipe someplace on here previously ensive ....

    and my breakfast chocolate pancake is actually under the "Fluffy Blueberry Pancake" thread....I have made an awesome cake from coconut and cream cheese and chocolate ..it was actually healthy!!!....that I will post when I figure out what the heck I did and replicate it!!!...dork that I am did not write it down as I made it and it was perfect!!!! eeeerrrrrr.... :anger :anger :anger

    induction friendly got to hasve choclate TOM craving Blobs

    1 ounce oif cream cheese softened
    1T cocoa powder (it is a spice)
    1 sweetner fo choice

    mix it all and divid it in to 4 portions and freeze on wax paper then save it till you need it let a blod melt slowly in your mouth and for .75 net carbs you got induction chocolate chemicals for your brain and some great fat taster relayed to brain chemicals too TOM don't stand a chance of knocking you out of ketosis now. If you use a liquyid sweetner you get .5 net carbs instead of .75 for each.

      ok I had this this morning and before I go I want to share it with you....this is soo good!

      Chocolate Hazelnut Raspberry pancake!
      toss in the blender the following

      1 giant egg
      2 giant whites
      1 1/2 tsp cocoa
      2 tbl of hazelnut meal (I am trying these and hope they do not bug me!)
      (or if you like the evil flaxmeal use half and half or half bran whatever it does not matter..change the nuts if you want! I found hazelnut meal at a local Trader Joes and had to try it!)
      slight pinch salt, slight pinch baking powder
      then if you have it use a lidful (more or less) of chocolate syrup sugar free...Itlalian soda kind...or a dash of chocolate extract and splenda or as I do just the chocolate extract ....
      blend well
      pour into oiled hot skillet on med (cocoa and nuts burn easily be careful watch it).drop 1/8 cup of raspberries evenly across the pancake....cook like a pancake....flip only one time...if you think is raw in the middle just put a cover on it and let it sit ..or (god forbid) nuke it for a few seconds.

      this with whipped cream and a few berries on top..at like 12 carbs... is to die for!!!...I do not get hungry all morning after eating this feast!...

        My Chocolate Spoon

        1 tablespoon Dutch processed cocoa powder
        1 tablespoon heavy cream
        1 tablespoon Sugar Free Syrup (or substitute 1 packet artificial sweetener and 1 tablespoon water)

        Mix it together. Let it sit for a few minutes, so it can thicken up alittle bit (when the cocoa powder touches the liquid, it sort of rehydrates and swells up a bit.)

        Yeah it's a small amount of chocolate maybe about a scant 1/4 cup, but that's why it's perfect: it prevents you from overeating but satisfies your chocolate tooth.

          I´m going to cook chocolate puding with cocoa powder (no sugar), soy milk and jelly (no sugar). I´ll tell you how it goes.

              We call it "fish tails" .... just neutral jelly, not flavour, not carbs.

                I fell in love with this recipe from Atkins: Decadent Chocolate Cake

                I made it as an alternative cake when we celebrated my Mom's Bday last month. For me it was great because it's induction legal. I will only make it for special occasions though, that's how good I thought it was. It has a nice dark chocolate flavor. I always use a mix of stevia and splenda when I make anything chocolate too, sometimes straight splenda is too much, and the chocolate seems bitter.

                BTW, make sure you follow the recipe exactly. Really do beat the whites for 6 min. The fluffy whites give it body. Also be careful stirring the rest in, you don't want to overstir and smash the air bubbles all out.

                Another favorite I made over the holidays last year when I was on Atkins were Karen Barnaby's Chocolate Truffles

                I also use Ghirardelli unsweetened chocolate and Droste unsweetened cocoa powder instead of plain Hershey's or Baker's chocolate.

                  Peanut Butter Cups
                  1 stick unsalted butter
                  1 oz unsweetened chocolate
                  1/3 c Splenda
                  1 T heavy cream
                  4 T peanut butter

                  Melt butter, chocolate, and Splenda in the microwave. Stir in cream and peanut butter. Line a mini muffin tin with mini muffin paper cups (foil if you can find them, paper otherwise). Divide chocolate mixture between the tins. Freeze until firm. These need to be stored in the freezer because they melt quick. You can eat them right out of the freezer.

                  143 calories and 20 carbs for the whole batch, so if you get 20 of them (I only fill the cups up about 3/8ths of an inch) out of the batch, they are about 70 cals and 1 gram each.

                  ps: of course you can lower the carb count by using one of the liquid splendas that are out there. I've also done it by reserving the peanut butter, using half the chocolate mixture to fill the cups then popping into the freezer for 10 minutes to set up the chocolate, then taking them out and putting a plop of peanut butter on top, smoothing it out, and then using the remaining chocolate mixture to cover the peanut butter. It comes out more like a Reese's peanut butter cup. But either way, it is serious chocolate. I eat these when I want to get in touch with my feminine side and they are very popular with my wife on a monthly cyclical basis for some reason.

                    Hi Nursy..made these today with my new KitchanAid Mixer.(Which I absolutely love BTW)

                    Chocolate I Don't Knows

                    8 oz cream cheese
                    4 eggs
                    2 TBSP cocoa powder
                    1 Tsp. Vanilla
                    Sweetner to taste - I used 20 drops of liquid splenda

                    Separate eggs, set whites aside. Blend cream cheese and yolks till smooth, add cocoa, sweetner and vanilla.

                    Whip eggs till stiff, gently fold cream cheese mixture in with whites and throughly mix. Drop by the teaspoon and bake 10 minutes at 350. After cooling, I frozen them, based on 2bigs choco connoction.
