I just boiled some chicken, and was planning on shredding it to make a casserole (or something for dinner)- Does anyone have a good boiled and shredded chicken recipe?

Re: Shredded chicken- any good recipes?
I do the same thing. I use the shreds in the chicken soup.
I also use the shreds this way, I sautee a bit of chopped onion and crushed garlic. I add the shredds, and then I do this:
For an Asian flavored chicken: I add ginger root and right before serving I add toasted sesame oil and finely minced green onion.
For a Southwest flavor, to the shreds I add chili powder, cumin, and a squeeze of lemon or lime
These shreds I roll into lettuce leaves and eat them as rolls.~Megs~
