    OK. Its almost here! What is everyone serving for Easter Dinner?

    Just going to be DH and I this year - one grown kid has to work, the other is in Colorado. We'll be having a nice baked ham (I'm going to use dijon mustard and SF maple syrup for the glaze), fauxtatoes with bacon bits and cheese, green beans & mushrooms and a side salad. Considering the size ham I bought, we'll be living off this thing for the next several weeks! I should start a "ham leftovers" topic!

      Going to moms. She's roasting a leg o' lamb, providing a green salad (found out about the salad last night) and some kind of non-Atkins dessert.

      My younger sis, also on Atkins, is bringing a ham, some kind of shrimp dish and assorted cheeses for before dinner nibbles.

      My older sis, not on Atkins, is bringing her husband (who's militantly anti-Atkins) and their children. She's bringing some kind of "low fat" meat dish (probably turkey), some kind of low fat dessert and some kind of low fat veggie dish.

      I'm bringing steamed asparagus with Hollandaise sauce, a low carb almond cake, a big bowl of mixed berries and a big bowl of whipped cream.

          You can bring earplugs Karen....So I don't have to listen to my BIL yammer on and one about how bad Atkins is and how much better he feels when he eats no fat, blah blah blah.

            LOL I am so lucky that I don't have one of those kinds of people in my family. My SIL does make comments every once in a while because she swears she was "doing Atkins" at one time a few years back---she has no clue! My sister made an Atkins friendly cheesecake at Christmas and my SIL made a rude comment about how she wasn't going to bother eating any of it because "why bother there is no good stuff in it anyway!" :sarcasm Everyone else in my family is so accomidating! I'm a lucky girl! :joy

              He's the only one. And the only reason why he's anti-Atkins is because he did his own version of Atkins---the one that says you must eat 3 bags of pork rinds daily, drink Slim Fast shakes, eat hoagies and gorge yourself on all the meat you can stuff into your mouth. Oh and at least a dozen cans of Diet Rite daily. He gained weight (shock shock!) and then started complaining to my sister that Atkins was killing him. My sister, in tears, called my mom that I was killing her husband because I told him how great Atkins was. My mom calls me at 10 PM to tell me to get off Atkins because BIL is dying from it. It was a mess. The next family get together, I had to listen to him complain to everyone how Atkins practically killed him and didn't work, blah blah blah.

                  Leg of lamb boned and retied on the bone with fresh from the garden sage, rosemary and thyme...spiked with garlic and roasted to med rare....no parsley or we could sing!!!!

                  fresh asparagus, easter rainbow bread, mashed potatoes (you know I have to make them for the guys) gravy, chutney, romaine and tomato salad...and either a cheese cake or torte for dessert with fresh strawberries.....

                    If I had time, I'd slaughter a spring lamb and make kibbeh, a dish with tender pounded raw lamb tenderloin, pine nuts, garlic and parsley. I leave out the cracked wheat and it tastes better that way. Roast rack of lamb and leg of lamb would also go over well. Since I don't have time to do anything, I'll be eating who-knows-what in some restaurant on the road.

                    Ostara is a special spiritual time for my faith, when we celebrate the principles of fertility, growth and creativity in our lives. The symbols of Ostara are eggs and rabbits (for fertility) and spring lambs (celebration of new life).

                    Lamb is very nice roasted with garlic, and it could be served over a "pasta" of ribbon cut zucchini in a delicious creamy garlic sauce. If only I had time to cook any. I'll have to see what I can find in a restaurant while travelling.

                      Reminds me of the M*A*S*H episode where Radar rescues the little baby lamb from being slaughtered.
