  • Who knows their cheese, poll one

    This cheese is the best known French cheese on the market and has a nickname "The Queen of Cheeses". Several hundred years ago, it was one of the tributes, which had to be paid to the French kings. In France, it is very different from the cheese exported to the United States. The "real" French cheese is unstabilized and the flavor is complex when the surface turns slightly brown. When the cheese is still pure-white, it is not matured. If the cheese is cut before the maturing process is finished, it will never develop properly. The exported variety, however, is stabilized and never matures. The stabilized variety has a much longer shelf life and is not susceptible to bacteriological infections. This cheese, one of the great dessert cheeses, comes as either a 1 or 2 kilogram wheel and is packed in a wooden box. In order to enjoy the taste fully, it must be served at room temperature.

          I am with Megs on this one happy dancing because cheese is my favorite food ....give me cheese anyday that is what made this WOE work for me is the infinite variety of cheese!!!!

          I even love the stinky ones!!!! I have NEVER met a cheese I did not like...ok I do not like American slices....the plasticy ones....

            Two of my supermarkets have a "cheeses of the world" section. So every week or so, I try out a different cheese from a different part of the world.

            And there's a cheese website (cheese.com) that has different cheeses from around the world. I haven't ordered from it because I'm scared I'd go cheese crazy and blow my monthly food budget on cheese lol.

            But when I do save up enough cash, I'm going to buy a hunk of Wensleydale. I've always wanted to try that cheese out ever since I was a little girl. I adored the James Harriot books and in one of them he wrote vividly of eating a big wedge of Christmas cake with a big wedge of Wensleydale and washing the down the mouthfuls with a good whisky.

              I love most cheeses, but I just discovered a baby muenster that is so yummy -- it's a mild cheese so it's good anytime.

                I love cheese. Haven't tried all that many of them yet, but I'm working on it. :yes I had Brie once.. it was baked or something with fruit on it. :vomit That was a few years ago.. enough to put me off new cheeses for a while.

                  You should try Brie again Origan, cause its got to be one of my favorites. First invite me over, and then get a really good brie, and some good crackers and take a tad bit and try it on a cracker. Now if you don't like it, I will be there to finish it up for you so it doesn't go to waste. LOL

                    Ok, when you retire and come back to the States, you're invited over for Brie, low carb cinnamon cheesecake and coffee/tea/veggie juice/water (your choice).

                    I guess I should really give it another try. I'll have to ask the deli for a good one!

                      Do you like bleu cheese, it tastes nothing like blue but it does have a kindred spirit. There is a bite to it. If you don't like bleu, don't get it cause its expensive and it won't last 8 months, one week

                        That's a great site. I just randomly chose one from the list (the name intrigued me). I'd love to try this - guess I need a trip to New York!!

                        Old Greek cheese known from then ancient times became quite popular among southern workers in the end of 19th century. Made of feta and kasseri combining the whey of mizithra to create perfect blend. Due to its transient properties this cheese was served only aged beyond 14 months and only in semi-circular molds often dubbed geometric half-moons. Unfortunately this cheese did not catch on in the states. Heavily used by the Union to feed its troops during the Civil War Union troops quickly grew tired of the staple. After defeating the South in this epic battle Union troops forbade the consumption of xanadu cheese in the conquered south. Its production immediately declined and fell out of existence. Only recent discoveries have revealed the recipe used for this concoction. Trendy coffee shops in upstate New York have started a fad of serving xanadu cheese with special Bavarian coffees.
