Do you have a category (appetizer, dessert, entree, etc) or phase of Atkins you're most specifically interested in? It would give a point of reference to begin looking for one that fits something you're specifically looking for.

              Oven Curry Chicken

in an oven proof pan with a lid (I use the short wide la Creuset Dutch oven however any covered baking pan will work ...put heavy duty foil over a baking pan...whatever works

....toss in to the pan ..one cut up chicken that has been powdered with

.....1/4 cup of your favorite over the counter curry powder (I love Beta Pac blend from Jamaica in most Caribbean markets)

.....a dash of cumin powder some powdered or fresh ginger like 1/2 tsp powdered or 1 tbl fresh...a tbl of paprika, a good tbl of hot New Mexican Chile, 1 tsp of black mustard seeds

.....large dice whatever veggies you have I used 1 giant onion, 1 red bell pepper, 1 tomato seeded, 3 cloves garlic, 1 shallot, 1/2 bunch celery

....1/4 cup melted butter poured over the top and into a 425 oven for at least 20 min before checking and stirring then check and stir every 10 min until chicken is cooked and veggies are tender
              .
....at this point add 1/2 can of coconut milk (I just freeze the other half)
and let the chicken cook for another 10 min salt and pepper to taste

              ......remove from oven
squeeze of lemon juice or lime to finnish it off and a handful of fresh cilantro....

serve with a low carb tortilla if your there ... or a salad and some sour cream or yogurt to top it...

Almond meal cake, for the OWL'ers. made this st' pat's day for my nieces b'day since everyone else was having b'day cake. i cut it in about 9 pieces and then topped the pieces with freshe whipped cream and strawberries. very buttery, almond flavoured cake, we really enjoyed it.

                  3/4 cup butter
3/4 cup artificial sweetener -- or packets or stevia equivalent to taste ( i use stevia to taste)
                  5 eggs
                  1 cup almond flour/meal
                  1 teaspoon baking powder
                  1 teaspoon vanilla
Optional - 1 tsp of almond extract

                  How To Prepare:
                  Preheat oven to 350
                  Cream butter and splenda
                  together in a large mixing
                  bowl. Add eggs one
at a time, beating after each
one. Add almond meal and baking
                  powder a little at a
                  time until blended. Add
extracts. Bake in a 9 inch
                  cake pan for 45 mins

Contact me anytime, Loonatika. I have a ton of recipes to share, but also I don't want to be a pain and muscle my way in, where others could rather have some fun. Either way, I'm happy to oblige whenever.
