  • Feta eggs... yum!

I have been on a feta eggs kick recently. It's a nice change from the usual. All you need is a block of feta, butter, and eggs. The feta usually comes in 8 oz, so if you are cooking for one, cut off 1/8 of the block. Coat your pan in butter, add the cheese and chop it up to get it melty and gooey. Scramble up 3 eggs, if cooking for one, after pour it over the cheesy goodness. Mix up all the ingredients carefully, scrapping the bottom of the pan to release the cheese.

It is very delicious, even for those who hate goat cheese or feta's flavor. It gives the eggs an amazing consistency. Be brave! It is so much better than regular eggs, which can make me gag if they are plain. It is the best cheese+egg combo out there, in my opinion! Just wanted to share!

It really is good- don't be afraid if you haven't had feta or if it seems to strong... the egg combination makes the cheese much milder. It basically melts in your mouth!

Sounds great. I have to get some Feta. I would probably add some fresh green onions or chives and some perfectly ripe tomatoes with pepper/salt on the side...

Definately will give this one a try soon.

          Thanks,
