        Glad I stopped back in! These look interesting. I made a variation of Thai beef salad yesterday with boston lettuce, leftover steak sliced in matchsticks, cucumber, red onion ( a wee bit) chili, fish sauce, lime juice and a dash of Splenda. Spicy hot and a real wake up to the taste buds. Mmmm.

          My herbs are dying due to the colder weather. But while they lasted I had a blast adding them to all sorts of veggie dishes, etc. I was able to dry alot of them and I also made herb vinegars (tarragon vinegar, an "everything" vinegar with a bit of everything in it, etc.) so that should last over the winter.

            What a summer it has been! When my herbs and salad greens really started producing, my sister in Tennessee was diagnosed with pancreatic cancer and died all within six weeks. With going back and forth to Tennessee and then to Ohio where she was buried, I missed most everything. The rest of my time has been spent buying a house and canning all the green beans and bumper crop of tomatoes I had this year. Summer is gone and I got little done.

            I do have some nice spinach coming on.
            People who say it can't be done, should not interrupt those doing it.

              So sorry about your sister Sunny.

              Here it is too hot for many of my herbs! I will start planting some at the end of this month.

              For salads, I like to roast eggplant and peppers and place them with some softened garlic right into my olive oil. I only do a small batch because it doesnt keep well, but it is wonderful over salads with the roasted flavor in it. And DH loves to dip his bread in it too.

                Sorry to hear about your sister.

                I was able to grow a fall crop of string beans, so I've been harvesting and eating them. I also made a quick pickle of them: blanched them, stuffed them into a jar with slices of garlic, and a few fronds of dill, then poured over a boiling mixture of water, salt and vinegar. They're nice in chopped into egg/chicken/tuna salad and mixed into a green bean salad with plain blanched green beans, chopped onion and vinaigrette.

                  My sincere condolonces to you and your family,Sunny.

                  Here are some Herbacious Salads - Fresh is best But Dried is OK w/ the exception of the Cilantro in the first salad and the Basil in the second salad.

                  Cilantro Salad: Cilantro, Parsley, Sprouts, Olive Oil, Garlic, Lemon Juice, Black Crushed Pepper, Salt, Oregano. (Onions optional, substitute sprouts w/sweet red and or yellow pepper - juilened or diced) VERY LOW CARB > Unique flavor too!

                  Tomato Basil Salad: Cherry Tomatoes (halved), Basil, Parsley, Red Onion or Scallions, Olive Oil, Salt, Black Pepper, Lemon Juice.

                  Feta Salad: Lettuce + Tomato + Cucumber + Avacado + Red or Green Onion + Olive Oil + Black Pepper + Oregano + Parsley + Basil + Hyssop + Feta Cheese + Olives (optional)

                  Leftover Chicken Salad: Soup Chicken sauteed in Olive Oil/pepper/garlic/ any other herb or spices Also can sautee w/ some salami or sausage bits >>> THEN Add it to Lettuce + cucumbers + Avacado + Red Peppers >>> Dress this:
                  - w/ Sesame Oil/Soy sauce/sm amt vinegar/ Ginger/ WHite pepper
                  - OR Olive Oil/Herbs/Spices
                  - OR Mayo + Pesto

                  HAPPY SALAD DAYS!!!
