  • Side dish ideas with a seafood supper

    I am having steamed/spiced shrimp and wild-caught bay scallops, broiled in butter (with garlic) for dinner. I am at a loss for side dish(es) to go with it. I don't want cole slaw. I had sautéed spinach and garlic in butter for lunch.

    I have broccoli, cauliflower, red and yellow peppers, mushrooms, green onions, Brussels sprouts, cabbage and a few other veggies (salad greens) to work with. I don't have any cheese except Parmesan.
    People who say it can't be done, should not interrupt those doing it.

    Saute the peppers with garlic and olive oil. Or make a salad of the peppers (raw) but add sauteed mushrooms that you've squirted with lemon juice. It will kind of be like a salad with marinated mushrooms.

      I ended up sautéing peppers, broccoli and mushrooms in some of the garlic butter from the scallops. It was good, but by then I was wishing for some spring asparagus, lightly steamed, with Hollandaise sauce or lemon butter sauce. That popped into my mind while I was lifting weights and I couldn't get it out of my mind.

      The scallops were delicious. I haven't had them in a while.

        Asparagus is on sale this week according to my grocery store circulars. So I'll be eating that (once I get to the store....)

          Our local Martin's (Giant) has organic asparagus on sale for $1.49 a pound! Yum! I'm still drooling for it, so I will be having it with my ham for Easter. I love asparagus with ham...and poultry...and beef...and salmon.

          I made an excellent salmon-asparagus pie about a month ago. I just remembered I have a piece in the freezer!

            LOL I was going to suggest the stirfried spinach or the asparagus. With the onions and red and green peppers and mushrooms I put the shrimp and scallops on skewers, brush with olive oil and pesto and grill them. Or you could do a green onion and pureed cauliflower bake topped with a generous sprinkle of the parmesan next time.
