Yall are going to think I am some kind of pork-rind-obsessed maniac, because I just posted yesterday about covering scotch eggs in them, but I had to share. I used the rest of the crushed up bag I had on some boneless skinless chicken breast dipped in egg. Oh. My. Goodness. It was so good I would make them this way even if I was not doing Atkins. I also added onion salt and Tony Chuchere's spice. They were absolutely marvelous. Someone else, PLEASE try them and post how delicious they are!!!

OMG, Beth. I do this quite often. Love it. I also coat onion rings in them. I saw a recipe the other day for fried devilled eggs. You make your usually devilled eggs and you dip them in raw egg and then crushed pork rinds then fry. I haven't tried them yet but I'm going to. Fish is also good fried in pork rinds.
I've made the scotch eggs but I've never covered them in pork rinds. I'll have to try that.My doctor told me to stop having intimate dinners for four. Unless there are three other people.
