I am not sure what to put in there!!!! the beef ribs you made may convert me into a beef eater!!!
I do not like meat as the main dish ...I really like to have the meat be the accent in the dish and the veggies be the main part ....do you have any ideas for that?
ok give me a recipe for Pisto...I have had it one time and it was wonderful!!!!....I will try it!!!!

Some people put eggplant in the pisto but the real one is:
1 minced large Spanish onion
Cut in cubes:
2 green peppers
5-6 tomatos (red, soft and peeled as if you were going to cook tomato sauce)
3-4 zucchini
salt
olive oil
First fry in olive oil the onion (medium heat). When it´s soft add the green peppers, fry lightly for 4-5 minutes, add the tomatos, mix and fry lightly for 4 minutes again, add the zucchinis, mix and fry again for 4 minutes, add salt, close the cooker. As I showed in the ribs post, maximum heat, wait until the two rings are up, then minimum heat, 4 minutes.
When ready open the cooker. Move all. If it´s too liquid let it boil, low heat, cooker opened.
oh my gosh I didn't know there was a name for that mixture i love it cept I use colored bell peppers instead of green bell peppers.
How long does it keep? I've been worried about over cooking the zuchini in the pressure cooker so I do mine in the frying pan.
Don´t worry. 4 minutes in the cooker is perfect. Soft but not overcooked. Well I hate overcooked veggies. If I have to choose I´d prefer them hard or even raw!
First you fry the onion, green peppers and tomato and when you add the zucchini you just move all and close the cooker and cook them all.
PISTO keep in the fridge for 4-5 days but I usually cook a big amount and freeze in portions. It´s a saver!

Veggies cook so quickly anyway, unless I'm making a big pot of spaghetti sauce maybe, i don't see myself using a pressure cooker for veggies, at least not yet, but I haven't used a pressure cooker yet, so that may change.
I haven't picked one up yet didn't get a chance last weekend, but I hope to this weekend! A new toy! I can't wait! :joy

OK, its easy to tell you what I don't like--No baby animals or Easter animals! Translation is...no lamb, no duck, no veal, no rabbit. Oh and also no squirrel or opossum.
Beef, pork, chicken any and every kind of seafood except conch are good!
