LC Teriyaki Sauce
1 cup soy sauce
Thumb size piece of ginger, rough chopped
Two cloves garlic, rough chopped
1 cup equivalent sugar (I used 25 drops of sweetzfree)
Optional - 1 tsp not/sugar for thickening mixed in a little water
Simmer the soy sauce, ginger, and garlic for 20 minutes over medium low heat. Don't use high heat or it'll become bitter and boil over, you just want a few bubbles and a little frothing. Remove from heat, strain out the solids, and mix in the sweetener and thickener slurry (if using).
1 tablespoon has just under 1 carb. (0.8 )
I love this for an easy teriyaki chicken lunch - pan fry boneless skinless chicken thighs, then chop up and add some frozen stir-fry veggies and a tablespoon of teriyaki sauce. I throw everything in a tupperware and bring to work for lunch. It's great! It's also very nice drizzled on salmon.
