Can anyone suggest baking sheets (cookie sheets, jelly roll pans) that are something besides aluminum or silicone? Seems like they don't exist.

I buy the inexpensive ones and use parchment paper or Silpat to prevent sticks.
Not surprizingly the inexpensive brands last longer and bake better than the more expensive ones in my opinion.~Megs~

Yea, I buy the cheap ones too. We have a great flea market here and I can get 3 "non-stick" cookie sheets and or muffin pans for $10 bucks. Depending on what I'm using them for I cover them with aluminum foil or parchment paper.

I, too, use parchment or silpat on mine.
I also have the "air bake" type (they are insulated; double layer, and require less heat - but you aren't supposed to immerse them in water). That's another reason for the parchment or silicone.
Even my hubby uses parchment when baking chicken, roast, etc., to help with clean-up.Started Atkins: 21 Sep 2003
