  • Does Tabasco sauce go bad?!

    I've got a bottle in my cabinet that's been there a long time. It's still really hot, but it's kind of brownish in color now... urplequ:

    Just look at the expiry date. It it´s ok the date, don´t worry. The brownish color may be just because the bottle is opened = because of the oxygen.

    If you still have doubts .... don´t eat it.

      I've always been leary of eating it when it changes color Higgies! To prevent that from happening, I keep mine in the fridge, I've noticed that it won't change color if I do that!

        The vinegar content will keep it from spoiling (like growing moldy) but it will also denature the color. It should be fine. If it has an off-taste, odor or has fuzzy stuff floating in it, toss it out.

          Yea, I was just looking at a bottle, there is no expiration. But me, I still wouldn't use brown tobasco...ewww.

              LOL! Yeah, there is no expiry on the bottle...I'm sure it's fine. I tasted a dab....just looks weird...

                This exact same thing just happned to me about 3 weeks ago! It was up at the cottage and it had turned brown and I figure it's becuase it had frozen (there's no heat up there when we're not there so it had been frozen quite a bit). Guess that's not why! I was gonna use it but threw it out cause I just didn't feel right about the colour..looked really really weird. :yikes

                  It is oxidized as Pau said and I agree with Megs it is fine the vinegar (and I do not keep vinegar in the frig either) keeps the peppers pickled ...it is fine if it smells like tobasco..have you ever seen how they make it???? it is aged in vats and fermented !!!!! so it is not attractive...but it is hot sauce it does not need to be cute just good!!!

                        Most hot sauces don't require refridgeration. The ones to watch out for are the ones with large amounts of vegetable paste to vinegar, which will upset the pH such that it could spoil, or those with lots of garlic, which is prone to botulism contamination in certain situations.

                          I also found that my hotsauce turned brown, So I used it up quick. LOL

                            actually the company that makes tabasco sauce McIlhenny recommend using it with in 60 months either opened or unopend.
